Substances:

  • 3 cups combined grape or cherry tomatoes
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed crimson pepper flakes
  • 3 tablespoons olive oil, divided
  • Kosher salt and freshly floor black pepper
  • 4 hen cutlets
  • 1 1/2 cups Panko*
  • 1/2 cup freshly grated Parmesan
  • 1/2 cup all-purpose flour
  • 2 giant eggs, overwhelmed
  • 6 ounces contemporary mozzarella, sliced
  • Contemporary basil leaves

Instructions:

  1. Preheat oven to 400 levels F. Flippantly oil a baking sheet or coat with nonstick spray.
  2. In a medium bowl, mix tomatoes, garlic, oregano, crimson pepper flakes and 1 tablespoon olive oil; season with salt and pepper, to style.
  3. Season hen with salt and pepper, to style.
  4. PANKO MIXTURE: In a big bowl, mix Panko, Parmesan and remaining 2 tablespoons olive oil; season with salt and pepper, to style.
  5. Working one after the other, dredge hen in flour, dip into eggs, then dredge in PANKO MIXTURE, urgent to coat.
  6. Place hen in a single layer onto the ready baking sheet and coat with nonstick spray.
  7. Place into oven and bake for 8 minutes.
  8. Place tomato combination in a single layer across the hen on the ready baking sheet.
  9. Place into oven and bake till the hen is cooked via and tomatoes have burst, an extra quarter-hour. High hen with mozzarella over the past 10 minutes of cooking time.
  10. Serve instantly, garnished with basil, if desired.

*Panko is a Japanese-style breadcrumb and might be discovered within the Asian part of your native grocery retailer.
